The Culinary Coordinator position is responsible for assisting in the execution of projects relating to operations excellence, culinary innovation, and core menu improvements.  The position performs routine functions such as collecting and portioning ingredients, cooking, and adhering to performance, execution, and sanitation standards.  Solid knife skills, knowledge of cooking fundamentals, and basic culinary math; culinary training and/or professional cooking experience preferred.  The Culinary Coordinator assists with product testing, evaluation, recipe testing, and documentation.

 

ESSENTIAL REQUIREMENTS & KEY RESPONSIBILITIES

  • Assists in preparing and cooking food samples for tastings and testing according to procedures and instructions provided.
  • Supports recipe testing, conducts research and development, and nutritional analysis of food items; proficient in recipe testing best practices, including mise en place, note-taking requirements, recipe research, recipe writing and editing, and plating of dishes.
  • Measures, weighs, and mixes specific test ingredients in a very precise and careful manner.
  • Identifies ingredient needs and prep ingredients for daily test work.
  • Conducts shelf-life testing, yield analysis, and collects product and recipe data as needed.
  • Follows and maintains all sanitation, health, and other policies and procedures as well as MAH culinary standards, specifications, and procedures.
  • Performs daily and weekly cleaning maintenance on flat-top, fryers, hoods, and grills.
  • When needed, conducts product audits to ensure specifications from manufacturers are being adhered to.
  • Responsible for all test kitchen inventory, including ordering, receiving, rotation, and quality of all test kitchen products.
  • Schedules donation pick-ups with local organizations.
  • Off-site errands (i.e., grocery store, preparing sample shipments, dry ice pick-up).

 

 

Requirements and Qualifications

  • High school diploma or equivalent
  • Must be able to operate and maintain industrial kitchen equipment
  • Demonstrate a strong background with hands-on experience in basic culinary techniques and cooking methods with a minimum of 2 years of BOH experience in a restaurant
  • Excellent attention to detail
  • Basic Knowledge of Q/A standards and practices
  • Solid written and verbal communication skills
  • Position requires own transportation and must be willing to use personal vehicle for test kitchen errands (grocery, etc.) Gas mileage is reimbursable
  • Positive, can-do attitude
